Chicken Caprese Flatbread

Ingredients: Time: 7 mins. Serves: 1
1/2 tbsp olive oil
1/2 tbsp white wine vinegar
1 pinch kosher salt
1 pinch black pepper
1/4 c romaine lettuce
1/3 c chicken breast, canned, drained
1/2 mozzarella cheese stick, chopped
3 basil leaves, fresh
5 cherry tomatoes, quartered
1 multigrain flatbread
Directions:
Mix first four ingredients together in a bowl. Add rest of ingredients, except flatbread, to bowl and toss to coat. When complete, arrange chicken mixture on multigrain flatbread and roll.

Swap out romaine lettuce for spinach as spinach has more calcium, iron, magnesium and potassium than romaine!
